My favorite chicken sausage to use is Al Fresco, because it is minimally processed and no preservatives or nitrates added. My favorite flavor is Mango Adobe Chicken Sausage. With our featured recipe though, we are using a chicken sausage from the Whole Foods Market. It is a Orange Ginger Chicken Sausage, which also has no preservatives or nitrates added, with a plus, the chicken is grown organically.
This sausage caught my eye, because usually ginger is pared with lemon, but I thought I would give it a try. The actual ingredients in the product are as follows, “Chicken, sea salt, Organic Dehydrated Vegetables (garlic and onion powder), Organic Spices, Organic sugar, Organic Dehydrated Orange Peel, Organic White Sesame Seed, Citric Acid, and Organic Orange Oil, Pork Casing.” Sounds great, right?
Maybe your asking, How is an organic chicken raised? According to the Whole Foods Market Blog on raising organic chickens is:
- The birds must be raised organically no later than two days after they hatch;
- They must be fed certified organic feed for their entire lives. Organic feed cannot contain animal by-products, antibiotics or genetically engineered grains and cannot be grown using persistent pesticides or chemical fertilizers.
- It is prohibited to give drugs, antibiotics and hormones to organic birds (please note: federal regulations prohibit the use of hormones in raising poultry).
- All birds must have outdoor access.
According to “She Knows“, “The chickens are not penned up in a cage or kept inside. Instead, they are allowed to roam through fields and pastures and to graze on the grass. The United States Department of Agriculture (USDA) requires that the animals have outdoor access to be considered free range. They also can seek shelter in a barn when they choose. These procedures are practiced all year long.”
Our featured recipe, and here is what you need:
1 1/4 pounds (about 3 sausages) Organic Orange Ginger Chicken Sausage
3-4 tbsp. avocado oil, certified non-GMO, organic
9 organic mini-sweet peppers, seeded, cut into rings yellow, red, orange
1 cup orange ginger sauce
Heat a large ceramic coated frying pan with oil over medium heat.
Next in the same pan add the prepared peppers and cook till tender, but still crunchy, about 3 minutes. Place onto a plate and set aside. Leave pan on burner.
By this time the chicken sausage should have cooled some. Cut sausage into 1 inch chunks. Add peppers and cut sausage back to heated pan. Add the orange sauce and mix in till well coated, and allow the mixture to cook a little till sauce has heated, about 3 minutes.
Plate the cooked Orange Ginger Chicken Sausage with Sweet Peppers onto a serving platter and serve.
