Spanish Chicken Salad

Paprika is used to garnish many foods we prepare. Like soups and deviled eggs, also for flavoring potato and pasta salads. It is also used in BBQ. Most of the prepared seasonings that are store bought for marinating meats have paprika in it.

The paprika we are accustomed to using is the sweet Hungarian paprika. Paprika comes from the pods of Capsicum annuum peppers that are dried and crushed to form the powdery spice.

The sweet red chili peppers are originally native to North and South America. But today, most paprika comes from Spain, South America, California and Hungary.

Besides the sweet Hungarian paprika that is commonly used , there is the Spanish Hot paprika or smoked paprika. Dose it make a difference in your recipe the use of paprika (the classic sweet) to smoked paprika?

Yes it does matter. Most recipes use the sweet paprika that we reach for in our spice cabinet. It is derived from the sweet red chili peppers and labeled “paprika”. But smoked Spanish paprika requires the peppers be smoked, usually with oak wood, prior to processing.

Smoked paprika has a distinct flavor after being smoked. As an example smoked paprika is essential for Mexican chorizo sausage. If you used regular paprika, the chorizo would not taste the same.

Paprika as for any spice has a two fold purpose when we use them. One side is the flavor spices give to our recipe and the other side is for health reasons. Any spice including paprika when consumed stimulates enzymes in our digestive system to fight off inflammation as will as bad bacteria, just to name a few good healthy reasons.

Now for the featured recipe Spanish Chicken Salad and here is what you will need:

3/4 cup slivered almonds, toasted

2 cloves garlic, minced

1 tsp. paprika, Spanish smoked

2 tbsp. balsamic vinegar

2 tbsp. mayonnaise

16 oz. mix lettuce greens

4 cups cooked chicken

2 roasted bell pepper slices, cut into smaller slices

toasting-slivered-almonds-for-Spanish-Chicken-SaladIn a frying pan over medium heat, warm 2 teaspoons of oil. Add the almonds and toast, stirring until they are crisp and golden. This should take about 5 to 7 minutes. When you start to smell them toasting, remove the pan from the burner. If you continue to toast them, they will burn.

Place 4 chicken breasts into stock pot and cook on medium heat until the chicken has reached an internal temperature of 165 to 170 degrees.

Remove from pot, set aside and let cool. Once cooled chopped chicken into 1 inch chunks.

You can plate to the side some shredded Jack cheese and sliced roasted bell pepper, for extra toppings.

Herb Chicken Cranberry and Almond Salad

Is our featured recipe truly a salad? According to Wikipedia there is a ” Green Salad” that consists of leafy vegetables. Such as lettuce greens, spinach, arugula, or any other leafy green. They are normally garnished with nuts or croutons.

There is the “Vegetable Salad” that includes common vegetables like cucumbers, peppers, onions, radishes, tomatoes, and celery.

Then there is the “Bound Salad” at which a great example is the Potato Salad. A “bound” is arranged or tossed in the bowl with other ingredients mixed with a thick sauce, usually a mayonnaise base.

The way to test and see if your “bound salad” is truly a “bound” is scooping it with a ice-cream scoop, then placing it onto a plate. When removing the scoop, the salad should hold its shape.

Bound Salads also are used to make sandwiches, by spreading them between two pieces of bread.

Other examples of such salads besides the Potato Salad are Tuna Salad, Egg Salad, Pasta Salad, and yes a Chicken Salad.

The original question is answered by the last five words of the prior paragraph. That is yes the featured recipe is truly a salad.

This is what you will need:

ingrdients for Herb Chicken Cranberry and Almond Salad

1 1/2 pounds chicken breast, boneless and skinless,

1 cup mayonnaise, homemade, link here for recipe

1 cup dried cranberries

1/2 cup almonds, slivered

3 tablespoons lemon juice (for salad) + 1/2 cup lemon juice (for packaged garlic/herb mix marinade)

1/4 cup sugar

1 package Weber Garlic and Herb (all natural ingredients)

Preheat oven to 350 degrees.

Add chicken to a zip lock bag. Mix Weber ingredients with 1/2 cup lemon juice according to instructions (no oil or water needed). Pour over chicken and mix till meat is coated. Zip the bag and place in refrigerator for 30 minutes to one hour. Remove from bag and place on a grill over a cookie sheet and bake for 30 to 40 minutes or until chicken is 165 degrees internal temperature. When chicken is done set aside awhile to cool. Once cool to the touch, cut chicken into 1/2 to 1 inch bite sizes. Set aside.

In a large mixing bowl, mix lemon juice and sugar together. Next add cranberries, almonds and mayonnaise, mix till well incorporated.

Chopped Broccoli Tomato and Bacon Salad

4 bunches broccoli, chopped

½ head cauliflower, chopped

12 bacon strips, cooked and cut into 1 inch strips

1 cup tomatoes, seeded and chopped

1/3 cup white onion, chopped

2 hard-cooked eggs, diced

1 cup mayonnaise (homemade recipe to follow)

1/3 cup sugar

2 tablespoons balsamic  vinegar

In a large salad bowl, combine the; set aside.

In a large salad bowl, combine the mayonnaise, sugar and vinegar. Add broccoli, cauliflower, bacon, tomatoes, onion and eggs. Mix vegeatble/bacon miture with wet ingredients, till well coated. Plate and serve.

1 pound large chicken breasts (about 3) skinless, boneless

1 cups orange marmalade jam

1/4 cup balsamic vinegar

2 tablespoons soy sauce

3/4 tsp. crushed red pepper, optional

16 ounces of mix greens: Spinach, Arugula, and Chard

Preheat your oven to 350 degrees.

Using a medium sauce pan over medium-high heat, add jam, vinegar, soy sauce, and crushed red pepper. Mix all ingredients together and bring to a small simmering boil.

Next add sauce to a large mixing bowl, and toss in chicken pieces. Mix together until chicken is well coated. Then pour into a baking pan. Use a spatula to scrape sides of bowl, getting  every last drop of sauce. Put in heated oven for 30 minutes or until meat is done, turning meat once.

Remove, and allow to cool about 5 or 10 minutes. Spoon the sauce into a large salad bowl (the sauce is your salad dressing). Next add greens, and mix until greens are well coated.

Those that read Splendid Recipes and More may have noticed our favorite way of using chicken is in salads, and therefore Salad as a Main Course. We bought some Herb Blend salad greens, which are a mix of red and green Romaine, red and green Oak leaf, Lollo Rosa, and Tango. Those are the different lettuce leafs. The herbs included all organic: red and green Chard, Mizum, baby Spinach, Arugula, Frisbee, Radicchio, Parsley, Dill, and Cilantro.

Wow that’s a lot of green and red leafy greens with lots of flavor. Did you know Swiss chard contains fiber and syringic acid, both of which help to regulate blood sugar levels. Its great to the health of your skeletal system, as it contains calcium, magnesium, and vitamin-K.

It has cancer preventative properties because of the fiber, chlorophyll, phytochemicals, and other plant pigments it contains. Studies have found that leafy green vegetables are particularly beneficial against colon cancer.

This leafy green is high in iron, essential for maintaining the health of the circulatory system and the prevention of anemia. The vitamin-K it contains helps with blood clotting and prevents excessive bruising and bleeding.

Research has reported that 30 mcg per day of biotin is great for the health of your hair and one cup of Swiss chard contains about 10.5 mcg. Swiss chard is also high vitamin-C and vitamin-A, both of which assist the hair follicles in the production of sebum.

One cup of Swiss chard contains 9,276 mcg of lutein, an antioxidant that is essential for eye health. It is suggested we consume 6,000 to 10,000 mcg of lutein for excellent eye health and preventing eye degenerating diseases.

The last herb green mentioned is Tango. It is full of vitamin-A, C, and folates. It also has vitamin-k which plays a role in Alzheimer’s disease patients by limiting neuronal damage in the brain. This is what you need for the – Almond Coconut Breaded Chicken with Peaches -.

Mix the two flours in a medium to large mixing bowl and set aside. Depending on the number of person’s you are serving, you will need 2 to 4 skinless, boneless chicken breasts.

Cut each breast in half, then slice vertically into three slices, and cut each slice diagonally into three pieces.

Now throw some flour out onto a cutting surface, and bread the fillets on both sides liberally.

Place the breaded chicken into a large heated pan with 3 to 4 tablespoons of coconut oil. Cook until done, about 4 to 5 minutes on each side. Pieces should cook to a golden brown. Plate and set aside.

Herb Salad Mix with avocado oil and lemon

To a salad bowl add 1/4 cup avocado oil, juice of 1/2 of a lemon, 1/4 teaspoon of Himalayan salt, and 1 teaspoon of dried basil. If you want you could add 2 to 3 tablespoons of wild honey. Next add the mixed greens, about 4 to 5 handfuls. Mix greens with avocado oil and seasoning until the greens are well coated. Adding the oil, lemon juice, and other seasonings to the bowl first, and then the greens last will assure an even coating.

Do this with any salad you make. If you add the greens first, then the nuts, dried cranberries, and grated or chucked cheese, and add the dressing last, it will not coat evenly and the nuts, cheese, and cranberries will always seem to not mix in evenly, with some mixed in and others at the bottom of the bowl.

Always add your dressing or vinaigrette, nuts, cheeses, cranberries and the like first, then the leafy greens last, so when mixed together everything is evenly mixed in the salad bowl.

In the image you can see darker specks, which are trace minerals apart from the salt. These trace minerals are vital to your diet and your health.

Plate the herb greens, top with some breaded chicken and some peach slices. We used fresh frozen peaches, when thawed they have the same flavor as a fresh peach. Fresh peaches though, when in season are a better choice. Enjoy!!

Preheat oven 350 degrees

In a large salad bowl mix ginger, garlic, onion slices and peppers; making sure to incorporate well after each addition. Next mix in diced pineapple; add cooled shredded chicken. Pour balsamic vinegar onto chicken mixture and mix in well. Just to let you know this is a cold chicken salad.

It’s optional to sprinkle fresh chopped cilantro over the salad. You could also use parsley if you want, though it doesn’t add or have the distinct flavor that cilantro has. Here we are using kitchen shears to cut cilantro into small pieces and spread out over the salad.

Summer is just around the corner and the leafy greens that were planted as seed in the early Spring are sprouting from the ground about now. Have you considered what you are going to do with all those fresh leafy greens that will soon hit the market?

Will here at Splendid Recipes and More we have some options. Making up a leafy green salad and adding chicken breast to it, and of course a dressing or vinaigrette.

Chicken breast is the lean meat of the poultry bird. A great choice for weight control. The method of cooking the chicken is either to Broil, grill or bake it. These methods offer good nutrition and flavor.

What is your knowledge of all those wonderful greens you see in your garden or in the produce department of your favorite market?

There’s: Kale, Spinach, Arugula, Red and Green leaf lettuce, Cabbage, Endive, Radicchio, even Cilantro, Mint, Fennel, and Basil.

They are all a nutrition powerhouses and excellent source’s of vitamins A C, and K, and some like kale are a good source of calcium, as well as folate and potassium.

The benefits of eating these greens are weight loss and control, as they are a high fiber food. Cuts your risk of high blood pressure plus heart disease. Eating any of these greens will reduce blood clotting, reduces calcium in arterial plaques, reduces inflammation, and you will get improved memory and eye sight as well.

Of course you can add some color to the salad, like red, orange or yellow bell peppers. Don’t forget the cherry tomatoes, red onions or even some wild carrots (they have varying colors as well).

Orange colored vegetables and fruits have a lot of health benefits. Such as beta-carotene not only good for eye health, but can also delay cognitive aging and protect skin from sun damage.

Beta carotene is a precursor for vitamin A, which is commonly referred to as retinol. Vitamin A is important for night vision, also an antioxidant that can neutralize damaging free radicals in the body.

The old days always taught us that only citrus fruit had vitamin C. But all orange foods are full of vitamin C, an antioxidant that protects against heart disease and helps rebuild collagen in the skin. Also as an added note: Vitamin D is not the only vitamin for bone health and suppport, your collagen also helps make and maintain strong bones.

All the more reason you need to prepare Kale Sweet Potato and Chicken Salad. Here is what you will need.

2 medium sweet potatoes, peeled and diced (1 inch squares)

3 tbsp. olive oil, divided

Salt and pepper

3/4 pound frozen breaded chicken tenders

1 cup Mango Chipotle dressing

1 bunch Tuscan kale, tough stems and ribs removed, thinly sliced (about 6 cups)

½ cup cashews, chopped

 

Preheat oven to 400 degrees

This recipe calls solely for Kale, but as you can see on the cutting board above, we mixed in other greens. Such as some spinach, arugula, white and red cabbage and julienne cut broccoli.

In a large mixing bowl toss sweet potatoes with the olive oil, salt and pepper.

On two rimmed baking sheets, arrange diced sweet potatoes on one sheet and frozen breaded chicken strips on the second rimmed baking sheet.
Put in the preheat oven and bake 20 minutes or until potatoes are tender and chicken is cooked through. Let cool to room temperature.

Make the dressing while the chicken and sweet potatoes are baking.

Mango Chipotle Dressing

2 Mangoes, peeled, pitted (about 1 ½ to 2 cups)

4 garlic cloves, peeled

2 Chipotle Chili Peppers in adobo, wash peppers and de-seed *

½ cup Olive Oil

¼ cup Vinegar

3 – 4 tbsp. Lemon Juice

2 tbsp. Sugar

¼ tsp. Salt

Place mango flesh, garlic gloves and peppers into a food processor and puree. Next add oil, vinegar, lemon juice and processes until well incorporated, about 1 minute. Add sugar and salt process a few seconds.

Makes about 2 ½ cups

*if too spicy, use only 1 pepper

After chicken has cooled, chop into pieces.

In a large serving bowl toss potatoes, chicken, and kale with dressing and sprinkle with cashews. Plate and serve.

Here’s another health tidbit….the Kale, broccoli, and spinach are cruciferous vegetables that ward off cancer with only four servings a week. That red cabbage you see there has more vitamin C than an orange and has sulfur as well. Sulfur also helps build beautiful skin.

Have you forgotten what you just read, red cabbage can help you with that. Current research reports that red cabbage increases brain function.

This is one of my recipes I call a “Salad as a Main Course” because of the use of chicken mixed in with the leafy greens.

This is also a meal that can be done in about 30 minutes.

If you have never had a mango before it can be mind boggling as how to go about removing the flesh from the big seed in the middle.

If you can’t find any good fresh mangoes you can buy them chopped and packaged in your frozen section of the market. Did you know Mangoes can prevent cancer, lowers bad cholesterol, clears the skin of any problems, eye health, even alkalizes the body.

Mangos can be used in a verity of recipes. Here is one such recipe of how we use the mango. Here is what you will need:

3 tbsp. avocado oil

4 tbsp. curry powder

4 boneless chicken breasts cut in cubes

2 garlic cloves, finely chopped

½ red onion cut into julienne strips

14 fl. oz. coconut milk

2 ripe mangos cut in cubes

1 lb. baby spinach

3 oz. chopped cashews

red bell pepper cut into julienne strips

8 cherry tomatoes cut in half

Here’s a little information of coconuts:  For 1000’s of years the Asians have used the oil, water, meat and milk of a coconut to heal coughs, flu, ear aches, tooth aches, skin infections, constipation and much more. Curry is also great for lower inflammation in the body.

Chicken Curry Preparation

In a skillet, heat oil slightly and stir olive oil with curry powder for 4 minutes. Add chicken cubes and cook during 10 minutes at medium heat. Add garlic and mix well.

Next, add coconut milk mix in. Place lid over skillet and cook for 8 minutes more.

Salad Preparation

 

Mix together the prepared fruit and vegetables: mango cubes, spinach, onion, cashews, red bell pepper and halved cherry tomatoes in a bowl; season with lemon juice and olive oil.

Rotisserie Chicken, Walnuts and Sautéed Vegetables

I had been doing some errands and noticed it was time for lunch. To save some money and not eat out, I thought about what we had in the refrigerator. There was some left over Garlic Lemon Rotisserie Chicken, and some fresh produce I bought a few days back. I had an idea for a lees than 20 minute from chopping and cutting to sauteing and plating.

A part from saving some money, and not buying an inflammation causing , not to mention junk fast food, I made a healthy delicious fast food of my own.

The other ingredients I used were Brussels sprouts, sweet peppers, garlic, walnuts, and avocado oil. You can’t get a good meal from any fast food place with these ingredients. Will maybe if I had been close by to the Whole Foods Market.

I used red and yellow sweet peppers. The red for heart health and the yellow for joint health. Also the Brussels sprouts smash out cancer cells, as well as detox your liver because they are green, and walnuts have a healthy fat that is great for the cells in your brain, so walnuts for brain function.

The avocado oil also is great for brain function and supporting all the cells in your body. Without fat your cells would age and die faster. Consider the fat around your cells, like the air bag in your car that explodes upon a car accident. The air bag protects you, just like fat protects the cells from free radicals.

Here is what you will need:

1/2 cup rotisserie chicken, any flavor, chopped 1 inch pieces

3 meduim cloves garlic, diced

2 red sweet peppers, seeded and diced

2 yellow sweet peppers, seeded and diced

5 Brussels sprouts, end removed and diced

1/4 cup whole walnuts, chopped

1/8 cup avocado oil

 

Preheat a large ceramic coated skillet with the 1/8 cup avocado oil. Next add garlic and saute just until brown. Next add peepers, Brussels sprouts and walnuts, stir in and continue  to saute. Wen you note the peppers have turn a brighter color, add chicken and stir a few minutes just to warm the meat.

Plate and add a little sea salt for flavor , if you desire.

I didn’t add and salt as the garlic was sufficient for great flavor.
