Chopped Broccoli Tomato and Bacon Salad

This salad also includes eggs for an extra punch of protein. The salad has a carbohydrate (tomato), vegetable, fat, and a protein. It was also made with homemade mayonnaise that includes olive oil and avocado oil in its preparation. This salad contains omega-3, great for the skin, heart, and your emotional well-being.

The broccoli and cauliflower are crusiferous vegetables, at which are great for warding off cancer cells, with only 4 serving per week. Any other vegetable needs to be eaten ten times a day to get the same cancer protection results.

An added bonus to this recipe is what cauliflower does. It helps balance hormones by reducing excess estrogen. For an age-male that can be something good. Stroke is the third leading cause of death and the leading cause of age-related disability. Abnormal blood clotting in the cerebral blood vessels is the most common cause of stroke. Studies have shown excess estrogen in men promotes abnormal blood clots.

In women, excessive estrogen is weight problems, emotional problems, and including irregular menstrual periods. Either, heavy or light bleeding or no bleeding at all.

Chopped Broccoli Tomato and Bacon Salad

4 bunches broccoli, chopped

½ head cauliflower, chopped

12 bacon strips, cooked and cut into 1 inch strips

1 cup tomatoes, seeded and chopped

1/3 cup white onion, chopped

2 hard-cooked eggs, diced

1 cup mayonnaise (homemade recipe to follow)

1/3 cup sugar

2 tablespoons balsamic  vinegar

In a large salad bowl, combine the; set aside.

In a large salad bowl, combine the mayonnaise, sugar and vinegar. Add broccoli, cauliflower, bacon, tomatoes, onion and eggs. Mix vegeatble/bacon miture with wet ingredients, till well coated. Plate and serve.

Many who are not vegan or not allergic to gluten, make there sweet breads with regular white flour. It can be bleached or unbleached. I thought I would change that and use 100% whole wheat flour in our featured recipe: Pecan Buttermilk Banana Bread.

Even though it’s made with 100% whole wheat, it won’t ruin the fun of enjoying this sweet treat. Besides whole wheat is a complex carbohydrate and wont spike your glucose, or cause a serge of energy to only fall fast 20 minutes later.

The inside has Almond Toffee Bits or better know as Heath Bars. The outside of the bread is bake coated with sugar, for that extra sweetness.

The sugar coats better, and doesn’t clump like flour or leave a floury film on the baked cake. Instead, it leaves a slight sweet coating on the bottom and sides. Avocado oil or olive oil can be replaced with butter, considered a healthier alternative.

Pecan Buttermilk Banana Bread

2 eggs, beaten

1/3 cup buttermilk

1/2 cup butter, unsalted, melted (1/2 cup oil or apple sauce to replace butter)

1 tsp. vanilla

1 tsp. cinnamon or pie spice

1 cup mashed bananas (about 3 medium)

1 cup white sugar

½ cup brown sugar

1 3/4 cups whole wheat flour

1 tsp. baking soda

1/2 tsp. salt

½ cup almond toffee (or Heath Bars, about 4 crushed)

1 cup chopped pecans, divided

 

Preheat oven to 325 degrees F

Coat a 9×5 inch loaf pan with butter or olive oil and 3 tablespoons of sugar.

In a large mixing bowl blend together the eggs, buttermilk, butter and bananas.

Sift the flour, baking soda, cinnamon, and salt into a medium bowl. Add ½ cup pecans, almond toffee bits, and both sugars, mix in. Add flour mixture to banana mixture, mix till well incorporated.

Pour into prepared loaf pan and sprinkle ½ cup pecans over batter. Bake in preheated oven for 1 hour and 20 minutes or until a knife inserted in the center comes out clean.

Those that read Splendid Recipes and More may have noticed our favorite way of using chicken is in salads, and therefore Salad as a Main Course. We bought some Herb Blend salad greens, which are a mix of red and green Romaine, red and green Oak leaf, Lollo Rosa, and Tango. Those are the different lettuce leafs. The herbs included all organic: red and green Chard, Mizum, baby Spinach, Arugula, Frisbee, Radicchio, Parsley, Dill, and Cilantro.

Wow that’s a lot of green and red leafy greens with lots of flavor. Did you know Swiss chard contains fiber and syringic acid, both of which help to regulate blood sugar levels. Its great to the health of your skeletal system, as it contains calcium, magnesium, and vitamin-K.

It has cancer preventative properties because of the fiber, chlorophyll, phytochemicals, and other plant pigments it contains. Studies have found that leafy green vegetables are particularly beneficial against colon cancer.

This leafy green is high in iron, essential for maintaining the health of the circulatory system and the prevention of anemia. The vitamin-K it contains helps with blood clotting and prevents excessive bruising and bleeding.

Research has reported that 30 mcg per day of biotin is great for the health of your hair and one cup of Swiss chard contains about 10.5 mcg. Swiss chard is also high vitamin-C and vitamin-A, both of which assist the hair follicles in the production of sebum.

One cup of Swiss chard contains 9,276 mcg of lutein, an antioxidant that is essential for eye health. It is suggested we consume 6,000 to 10,000 mcg of lutein for excellent eye health and preventing eye degenerating diseases.

The last herb green mentioned is Tango. It is full of vitamin-A, C, and folates. It also has vitamin-k which plays a role in Alzheimer’s disease patients by limiting neuronal damage in the brain. So if your worried about getting this age related disease, just do the tango with the Tango green leaf herb.

This is what you need for the – Almond Coconut Breaded Chicken with Peaches -.

Mix the two flours in a medium to large mixing bowl and set aside. Depending on the number of person’s you are serving, you will need 2 to 4 skinless, boneless chicken breasts.

Cut each breast in half, then slice vertically into three slices, and cut each slice diagonally into three pieces.

Now throw some flour out onto a cutting surface, and bread the fillets on both sides liberally.

Place the breaded chicken into a large heated pan with 3 to 4 tablespoons of coconut oil. Cook until done, about 4 to 5 minutes on each side. Pieces should cook to a golden brown. Plate and set aside.

Herb Salad Mix with avocado oil and lemon

To a salad bowl add 1/4 cup avocado oil, juice of 1/2 of a lemon, 1/4 teaspoon of Himalayan salt, and 1 teaspoon of dried basil. If you want you could add 2 to 3 tablespoons of wild honey. Next add the mixed greens, about 4 to 5 handfuls. Mix greens with avocado oil and seasoning until the greens are well coated. Adding the oil, lemon juice, and other seasonings to the bowl first, and then the greens last will assure an even coating.

Do this with any salad you make. If you add the greens first, then the nuts, dried cranberries, and grated or chucked cheese, and add the dressing last, it will not coat evenly and the nuts, cheese, and cranberries will always seem to not mix in evenly, with some mixed in and others at the bottom of the bowl.

Always add your dressing or vinaigrette, nuts, cheeses, cranberries and the like first, then the leafy greens last, so when mixed together everything is evenly mixed in the salad bowl.

In the image you can see darker specks, which are trace minerals apart from the salt. These trace minerals are vital to your diet and your health.

Plate the herb greens, top with some breaded chicken and some peach slices. We used fresh frozen peaches, when thawed they have the same flavor as a fresh peach. Fresh peaches though, when in season are a better choice. Enjoy!!

When your hungry but to tired to make a big deal about preparing something to eat can be discouraging. But isn’t it great when you just go looking through the refrigerator to see what you have, and you come up with a simple idea. That’s what happened here with our Sweet Pork and apple Wrap.

The day before we thawed out some pork loin pieces. But by dinner time I was just too tired. So we just boiled the pork in water with some garlic and cooled it down and put it away in the refrigerator. That same day some home made tortillas were made.

 

 

 

 

 

Here is what I came up with, our featured recipe: -Sweet Pork and Apple Wrap- and here is what you will need:

The amount of ingredients for the wrap depends on the number of wraps you want to make. The recipe we are preparing makes about 5 to 6 wraps.

1 cup cooked pork loin pieces, thin sliced, about 1 -inch

1/4 lb. snap peas

1 red apple, cored, sliced 1/2 inch thick, do not peel

1/3 cup avocado oil

1 teaspoon Maya Coffee Rub (bought at Whole Foods Market)*

1 teaspoon balsamic vinegar

* If you don’t have a Whole Foods Market near by, here is a similar if not the same recipe you can use for the coffee rub spices…

⅓ cup fresh ground coffee (dark french or Italian roast)

¼ cup cocoa powder (dark Dutch cocoa)

⅓ cup dark brown sugar

1 tbsp smoked paprika

1 tsp cinnamon

1 tsp cayenne pepper

1 tsp sea salt

Instructions

Mix ingredients together and store in an airtight container like a mason jar.

In a large mixing bowl, add and combine well, the oil, vinegar, and coffee rub. Next add the cooked meat, vegetable, and fruit, and mix with the wet coffee rub until meat and produce are well coated. Keep in mind we are not marinading the meat and produce, as the meat is already cooked. The coffee rub is going to give the meat mix a great flavor.

Next add avocado oil to a large frying pan over med-high heat. In the Splendid Recipes kitchen, we always use ceramic coated pans (link here on some good reading about ceramic coated pans verses Teflon or non-stick pans).

When the oil is heated, add the meat mix and cook until the snap peas turn a brighter green, about 4 to 5 minutes.

Sweet Pork and Apple Wrap

Once meat mixture is warmed, remove from heat. Spoon 2 to 3 tablespoonfuls of mixture on to an open tortilla in the center. Fold tortilla up into a wrap or burrito.

Plate and serve, 2 wraps per person.

I had been doing some errands and noticed it was time for lunch. To save some money and not eat out, I thought about what we had in the refrigerator. There was some left over Garlic Lemon Rotisserie Chicken, and some fresh produce I bought a few days back. I had an idea for a lees than 20 minute from chopping and cutting to sauteing and plating.

A part from saving some money, and not buying an inflammation causing , not to mention junk fast food, I made a healthy delicious fast food of my own.

The other ingredients I used were Brussels sprouts, sweet peppers, garlic, walnuts, and avocado oil. You can’t get a good meal from any fast food place with these ingredients. Will maybe if I had been close by to the Whole Foods Market.

I used red and yellow sweet peppers. The red for heart health and the yellow for joint health. Also the Brussels sprouts smash out cancer cells, as well as detox your liver because they are green, and walnuts have a healthy fat that is great for the cells in your brain, so walnuts for brain function.

The avocado oil also is great for brain function and supporting all the cells in your body. Without fat your cells would age and die faster. Consider the fat around your cells, like the air bag in your car that explodes upon a car accident. The air bag protects you, just like fat protects the cells from free radicals.

Here is what you will need:

1/2 cup rotisserie chicken, any flavor, chopped 1 inch pieces

3 meduim cloves garlic, diced

2 red sweet peppers, seeded and diced

2 yellow sweet peppers, seeded and diced

5 Brussels sprouts, end removed and diced

1/4 cup whole walnuts, chopped

1/8 cup avocado oil

 

Preheat a large ceramic coated skillet with the 1/8 cup avocado oil. Next add garlic and saute just until brown. Next add peepers, Brussels sprouts and walnuts, stir in and continue  to saute. Wen you note the peppers have turn a brighter color, add chicken and stir a few minutes just to warm the meat.

Plate and add a little sea salt for flavor , if you desire.

I didn’t add and salt as the garlic was sufficient for great flavor.

Baja Citrus Chicken Bowl

Baja Citrus Chicken Bowl

Here’s a great recipe that will prepare in under 30 minutes. Though you will need to marinate your chicken first for 30 minutes to one hour depending on your intensity for citrus flavors. But once the meat is marinated, as I mention the rest takes under 30 minutes to prepare.

I found a great marinade recipe at She Knows Food & Recipes: Baja Citrus Marinade. The recipe calls for a Mexican beer, but I left that out. The following includes the beer if you wish to prepare the marinade with it.

Baja Citrus Marinade

Place all of the ingredients into a blender and process the mixture until combined. Pour the marinade over the meat of your choice, cover and place in the refrigerator for at least 2 hours prior to cooking ( I marinated the meat  for 1 hour).

You could also opt to replace the orange juice and zest with lime or lemon. I also replaced the canola oil (which is a seed oil and is the cause of inflammation in the body) with avocado oil.

Also this is one of my recipes I call –Salads as a Main Meal– as it contains meat.

The recipe I use is one I have -Smoked Turkey Black Bean Bell Pepper and Corn Salad-. I had some chicken breast I used in place of the turkey and I didn’t use the Mint dressing that goes with the smoked turkey salad, as I thought it would clash with the citrus marinaded flavored meat.

I just mix a little balsamic vinegar and avocado oil, with Himalaya salt (contains all trace minerals found in the salt mines) and black pepper.

The following is what you will need to prepare -Baja Citrus Chicken Bowl-. By the way I say Bowl, because I prepared this recipe for the family dinner, but as I went off  to work, I put mine in a bowl.

Baja Citrus Chicken Bowl

2 pounds (about 3) chicken breast, chopped 1-inch squares

1 can (15.5 ounces) black beans, rinsed and drained

1 1/2 cups fresh corn kernels

1 cup cherry orange tomatoes, halved

1 cup diced bell peppers (any colors)

1/2 cup finely chopped red onion

3 cups arugula greens

 

Marinate chopped chicken for 30 minutes to 1 hour. Then cook in heated 350 degree oven for 30 minutes or until chicken is 165 degrees internal meat temperature.

In the bottom  of a large salad bowl add add desired amounts of olive or avocado oil, balsamic vinegar, and salt and pepper to taste. Next add chicken, beans, corn, tomatoes, bell peppers, onion, and mix well with wet ingredients.

Place one to two hand fulls of arugula greens on a large salad plate and top with the meat mixture. Sever and enjoy!!

The Smoke Point of Oils

Smoke Point of Cooking Oils

 All oils used in the kitchen contain varying smoke points. That is the temperature at which they start to smoke and break down. Heating the oil beyond this point can cause toxic fumes and free radicals that are able to harm your body.

The more refined the oil, the higher the smoke point.

The following image shows the healthiest oils to consume as well as their smoke point.

Avocado oil when refined has a smoke point to 500 degrees. Almond oil also is a high heat oil to 450 degrees as well as coconut oil to 450 degrees. Extra virgin olive oil only has a smoke point to 350 degrees. Olive oil is best used as a salad oil or dipping oil.

Remember: Anytime you cook with oil, you risk overheating it, which can lead to the formation of unhealthy compounds. When your oil starts to change color, that’s a sign that it’s starting to degrade from to much heat.

Seed oils are not healthy for consumption. These include: corn, soybean, canola oil, sunflower, grape seed, and safflower.

Most vegetable oils today are made from GMO’s or Genetically modified Organisms. Many independent scientific studies have shown them to be toxic to our bodies.

Canola Oil, Vegetable Oil, and Corn Oil are oils high in omega 6 fatty acids, which in excessive amounts are actually bad for your heart.
