General odorsBaking soda is not just for baking and cooking, it can also be used for removing odors from all over the kitchen. Just as baking soda placed in your fridge will remove odors, but it will also remove odors from your hands.

You can also create a paste with a little water and baking soda and apply to your cutting board or other cooking services to remove any unwanted smells.

You can even wash your garbage pail with a mixture of water and baking soda. Also remove odors from dishrags and sponges by soaking them in baking soda and water as well.

Fish Odors– Slice a lemon in half and use the lemon flesh down on the cutting surface and your hands to cut that fishy odor. You can also chose to mix lemon juice with water to rinse your hands and cutting surface.

The citric acid in the lemon turns a group of decaying organic compounds called amines. When the lemon juice makes contact with the compounds that are causing that “fishy” smell, they are turned into ammonium salts which are less offensive to your nose.

Garlic Odors – Coffee ground are great at removing garlic smells. Wash your hands and then scrub with the coffee grounds. This exfoliates the skin, removing the dead tissues which is where the stink resides.

Onion Odors– Use some organic made toothpaste, like Dessert Essence made with natural tea tree oil and ginger oil or fennel oil . This will work for any of those strong fish and garlic smells as well.

More Techniques To Removing Fowl Odors From The Kitchen

Have you ever used parsley to combat your garlic breath? Rub it on your hands to remove that garlic smell as well. Not only parsley, but any fresh herb will absorb those odors. Just tear the herb into pieces and rub between your hands.

Ingredients For Delicious Winter Salads

What winter produce that is available, is sufficient to enjoy delicious winter salads along with great homemade dressings and vinaigrette’s.

The different crops available in the winter months include among others:

Beets: Available in season from fall through spring in temperate climates, and those available during the summer months, are from storage.

Belgian Endive: This leafy green is forced to produce under artificial conditions, making them available year round. Their traditional season, as with all chicories, is late fall through winter.

When grown in open fields they are covered with sand for about 6 months to keep out the light. When grown in hot houses they are placed in darkness for 6 months before shipping to market for purchase.

Brussels sprouts: These vegetables are part of the cabbage family.  They grow on stalks, and they last somewhat longer than when sold packaged or removed from their stalks.

Cabbage: This vegetable is crispy when raw with bitter flavor, though it mellows and sweetens the longer it’s cooked.

Sweet Potatoes: This root vegetable is often referred too or interchangeable with yams. The two vegetables are different though.

Most yams in the USA are sweet potatoes. Yams are dry and starchy, and grown mainly in Africa and Asia. They can weigh up too 100 pounds.

Sweet potatoes store very well and are available year round in warmer areas. Though their season is from late summer through winter.

Salads To Enjoy In The Winter Months

Chilly temperatures, and dark winter days are traditionally suited to cheese, meat, and vegetable casseroles, including pastas. A salad filled with raw vegetables may not seem appealing in the cold winter.

But what if you could prepare a warm winter salad, like this one – Warm Kale Salad with Dried Cranberries and Walnuts. This recipe is offered by a professional chef, author, recipe developer, educator and certified health coach at A Food Centric Life.

THE RECIPE

Warm Kale Salad with Dried Cranberries and Walnuts

1 large bunch of organic kale (Tuscan, Lacinato or Dinosaur)

1 large shallot

2 teaspoons salt

1 tablespoon olive oil

2 large cloves of garlic, minced

Handful of dried cranberries

Small handful of chopped walnuts

1 tablespoon Balsamic vinegar (suggestion: infused balsamic fruit flavored variety like dark cherry)

Salt and pepper, to season

Bring a large pot (5 quart/liter) of water to a boil while you are trimming the kale leaves and slicing the shallot. Trim the ribs out of the center of the kale leaves, and then cut the leaves crosswise into ribbons. Slice the peeled shallot crosswise into thin rings.

When water boils, add 2 teaspoons salt, then drop the kale leaves into the water and cook for 2 minutes (called blanching). Drain well through a sieve and place kale on a clean kitchen towel. Alternatively you can steam your kale for 2-3 minutes, and then proceed with the recipe.

In a medium sauté or fry pan, heat the olive oil over medium low heat until warm. Add the shallot rings, then the garlic. Cook for 1-2 minutes, stirring until softened. Be careful not to let them burn. Add the cranberries, walnuts, and vinegar. Stir and cook for a minute, then add the cooked kale. Toss the kale ribbons to coat and warm, season up with salt and pepper, and then serve.

Make this a even more warm winter salad by either serving the warm salad as a side dish with roasted chicken, as Sally the author of “A Food Centric Life” explains, or as a foundation for roasted salmon. She also suggests placing the warm salad over a bed of quinoa for a vegetarian or vegan entree.

Sally says you can use a fruit flavored infused balsamic vinegar like dark cherry or fig when making the vinaigrette.

Another great warm winter salad you can enjoy is: Sweet Potato, Kale and Shrimp Skillet

2 tablespoons olive oil

Red pepper flakes, to taste

2 garlic cloves, minced

2 cups sweet potatoes, diced

2 cups fresh shrimp

3 cups trimmed and coarsely chopped kale leaves

Salt and black pepper to taste

Heat a a ceramic coated cast iron pan over medium heat, add olive oil.

Next add onions and red pepper flakes, and saute until onions are soft and browned.

Next add garlic and cook about 30 seconds more.

Next add sweet potato and cook until soft, about 10-15 minutes. If necessary add a 2 or 3 tablespoons of water to help cook the sweet potato.

Next add shrimp and cook for 2-3 minutes, or until they are pink in color.

Turn heat to low and add kale, stirring in until wilted.

Season to taste with salt and pepper (optional).

Plate and serve.

Are fish meant to eat chicken, soy or wheat? A wild trouts diet shows otherwise.

Fish species evaluated by the USDA, found that farm-raised fish contained more total fat than their wild counterparts. Rainbow trout showed little difference in fat. Some could conclude that has to be good, the more fat the more omega-3 fatty acids the fish contains. Not necessarily. The extra fat in farmed-fish is inflammation causing omega-6 (Nutritional Health and Fitness).

Enough of the fishy information, now for our featured recipe: Roasted Trout with Baby Potatoes and Asparagus.

You will need:

1 pound baby new potatoes

1 pound asparagus, trimmed and cut in half crosswise

2 tablespoons olive oil

Himalayan salt and freshly ground pepper corns

2 whole rainbow trout, gutted

Half a lemon, thinly sliced

1 bunch thyme (lemon thyme if you have it)

Heat oven to 425 degrees

Mix vegetables to coat with oil.

Spicing up vegetables is a sure way to add flavor and taste, even for those who are picky about eating them. Roasting the vegetables with spices caramelizes the seasoning while sealing in the flavor.

The spice enzymes and chemicals will be absorbed into the vegetable during roasting. Finding the right spice and roasting style will make everyone want seconds.

To evenly coat the vegetables with a dry spice mix is best to mix in a little olive oil or if you wish to use a neutral flavored oil avocado oil could be used. The best way to do this is add the oil and spices to the bottle of the mixing bowl first, then add the vegetables and mix.

Here are some ideas of what vegetables and spices to roast together.

Moroccan Style Spice Rub

This spice mix will give vegetables a Moroccan blast of flavor. This warm to the palate spice mix pairs especially well with sweeter or starchy vegetables such as butternut squash, carrots, cauliflower, potatoes and sweet potatoes.

2 tsp. ground cumin

1 tsp. ground coriander

1/2 tsp. chili powder

1/2 tsp. sweet paprika, preferably Hungarian

1/2 tsp. ground cinnamon

1/4 tsp. ground allspice

1/4 tsp. ground ginger

1/8 tsp. cayenne

A pinch of ground clove

In a small mason jar, mix all 10 spices.

To a large bowl add 1 teaspoon of the spice mix and 1 or 2 tablespoons of olive oil, add diced or chopped vegetables, and mix well.

Rosemary Thyme Lemon Oil

Mix this infused oil with your vegetables before roasting to give them extra flavor. It’s a delectable complement to roasted beet, sweet potatoes, butternut squash, carrots and cauliflower.

Zest of 1 large lemon, removed in long strips with a vegetable peeler

2 tbs. extra-virgin olive oil; more as needed

1 tsp. chopped fresh rosemary

1 tsp. chopped fresh thyme

Over medium-low heat in a small saucepan, combine the lemon zest and oil. Cook until the lemon zest bubbles steadily for about 30 seconds. Remove from heat and let cool, about 3 minutes. Stir in the herbs and let sit 20 minutes more before using. This allows for flavors to infuse.

Chop or dice the vegetables, add Rosemary Thyme Lemon Oil to large bowl, add vegetables and mix to coat well.

Ginger Lemon Soy Infusion

Give roasted vegetables an Asian flavor by mixing them up with this savory infusion. Try roasting it with: broccoli, beets, carrots and cauliflower.

1-inch piece fresh ginger

1 tsp. fresh lemon juice

½ tsp. soy sauce

Set a small fine strainer in a small bowl. Peel and finely grate the ginger. Put the grated ginger in the strainer and extract the ginger juice by pressing the ginger in the sieve with the back of a small spoon.

Transfer ½ teaspoon of ginger juice to another small bowl and discard the rest or save for another use. Stir in the lemon juice and soy sauce. Toss with a batch of vegetables after roasting.

With this spice mix so the flavor is not robbed by the strong flavor of olive oil, roast your vegetables with avocado oil, which has a neutral flavor.

Garlic and Coriander Oil

This tasteful, spiced oil is made to be tossed with roasted vegetables as soon as they come out of the oven. It tosses well with: roasted asparagus, roasted beets, broccoli, cauliflower or green beans.

Have this infused flavored oil ready as soon as the roasted vegetables are out of the oven.

1-1/2 tbsp. extra-virgin olive oil

1 tbsp. finely chopped garlic (2 large cloves)

2 tsp. ground coriander

1 tsp. fresh lemon juice

Himalayan salt and freshly ground black pepper

Set a small saucepan over medium-low heat, with combined olive oil and garlic. Cook until the smaller pieces of garlic turn light golden-brown, about 3 minutes. Stir in the coriander and cook for about 20 seconds. Immediately remove from the heat and transfer to a small heatproof bowl to prevent overcooking. Keep warm.

Sprinkle the roasted vegetables with the lemon juice, season to taste with salt and pepper, and arrange on a serving platter. Spoon the toasted garlic oil over the vegetables.
