Stuffed Sweet Potato with Chipotle Black Bean and Corn Salad

Did you know a chipotle is a smoke-dried jalapeño? Yes, the word chipotle comes from the Nahuatl word chilpoctli which means smoked chili.  The people’s who lived in Mexico before the Aztec civilization are thought to have invented it.

Jalapeños come in different varieties, sizes and heat or spiciness. The chili loses little of its heat through the smoking process, and many enjoy both its spiciness and the natural wood smoke taste that accompanies it.

Though its used traditionally in Mexican cuisine, the chipotle now enjoys a broad range of uses throughout the USA and Canada.

Our featured recipe is a southwestern USA inspired  delight, and here is what you will need to prepare: Stuffed Sweet Potato with Chipotle Black Bean and Corn Salad.

4 small sweet potatoes, baked (read here about Sweet Potatoes and Their Benefits)

1 (15 oz) can black beans, rinsed and drained

1 cup corn

3 green onions, thinly sliced

1/2 cup cilantro, chopped

Vinaigrette:

2 limes, zested and juiced

2 teaspoons raw honey

2 teaspoons adobo sauce (from a can of chipotles in adobo)

1/2 teaspoon Himalayan salt

1/2 teaspoon fresh pepper, optional

vegetable mix for Stuffed Sweet Potato with Chipotle Black Bean and Corn SaladIn a large glass bowl, add the black beans, corn, onions, and cilantro. Stir to combine. In a smaller bowl, mix together the lime zest and juice, oil, honey, adobo, salt and pepper. Pour over the black bean mixture and toss to combine.

Italian Five Cheese Chicken Roll Ups

Italian Five Cheese Chicken Roll UpsWith little more than your favorite spaghetti sauce (we used a sauce made with cream and vodka – from the Whole Foods Market), cream cheese and a shredded Italian cheese blend, you can have yourself some chicken roll-ups. They are super easy to prepare.

Here is what you will need:

2 oz. of cream cheese softened

¼ cup bell pepper; diced (red, yellow, orange, green, use all colors, or your choice – we buy tri-colored frozen bell peppers)

¼ tsp. garlic powder

4 chicken breasts; boneless skinless

1 cup Italian 5-cheese blend, finely shredded

½ teaspoon dried oregano leaves

1 cup spaghetti sauce (your favorite)

salt to taste, optional

Heat oven to 400°

mix ingredients  togetherIn a medium bowl mix cream cheese, ½ cup of cheese, bell pepper, oregano, garlic and salt to taste.

When we salt in our recipes, it is always use Himalayan salt.

After you mix up the ingredients, set aside.

Cut chicken long ways across breast. Place each cut chicken piece one at a time in a large plastic bag, seal it and with a rubber mallet or rolling pin flatten chicken to ¼-inch thicknesses.

At one end of chicken strip roll up with cheese mixture, tucking in ends around filling to completely enclose the filling.

Place seam sides down in 13 x 19 inch baking dish coated with olive oil. Pour spaghetti sauce evenly over chicken, and cover with aluminum foil.

Remove foil, sprinkle chicken with remaining ½ cup shredded cheese. Bake an additional 3 to 5 minutes or until cheese is melted.

Here is what you will need for our Bacon Wrapped Garlic Lemon Stuffed Chicken Breast

2 chicken breasts, boneless and skinless, cut horizontally

1 pound cream cheese, room temperature

3 green onions, chopped

1 tablespoon garlic lemon seasoning

12 pieces bacon, partially cooked

Several tooth picks

Heat oven to 375 degrees

green onion garlic lemon cream cheese mixPrepare chicken breast by cutting each breast horizontally into two pieces, and set aside.

In a medium mixing bowl cream the cheese and add the chopped green onions and garlic lemon seasoning. Set aside.

partially cooked pork shoulder baconIn a large ceramic coated frying pan partially cook the bacon over medium heat.  Set aside in a separate plate.

chicken breast spread with cream cheese  Spread a layer of cream cheese mixture over one side of each breast section, but not to thick. Roll chicken breast up to conceal cream cheese, and secure with toothpicks.

Place all four bacon wrapped chicken breasts into a medium sized glass baking pan. Place pan into heated oven and bake for 30 minutes. Place under broiler for 5 minutes to crisp bacon.

Green Beans with Coconut and PecansThe side dish is a Green Bean with Coconut and Pecans. Here is what you will need.

3 cups of fresh green beans, cut into 1 inch pieces

1 tablespoon of coconut butter

1/2 cup pecan pieces

1/4 cup dried shredded coconut

Steam cut green beans. Add steamed beans and coconut butter to a serving bowl, and mix till beans are well coated with the butter. Next add dried coconut and pecans and mix in. Enjoy.

Mexican Marinated Steak Fajitas

Marinated Steak Fajitas

This flavorful Mexican fajita recipe is sure to become a family favorite. The following recipe will cook up best in a cast iron skillet. The recommended size, is about a 12 inch skillet. Fajitas can be made with beef or chicken, your choice.

To get that wonderful sizzle at home, serve on pre-heated individual cast iron fajita skillets. 

Here is what you will need:

3 tablespoons olive oil, divided

2 pounds skirt steak

2 medium yellow onions, sliced lengthwise (not into rings)

2 green peppers, sliced lengthwise*

2 red peppers, sliced lengthwise*

8 – 10 flour tortillas

*opt for orange and yellow peppers

Marinade:

1 tablespoon fresh lime zest

2 tablespoons extra virgin olive oil

2 cloves garlic

1 teaspoon ground cumin

1 teaspoon onion powder

¼ cup fresh cilantro

½ teaspoon crushed red pepper flakes

½ teaspoon salt

½ teaspoon pepper

Combine all marinade ingredients in blender and process until smooth. Pour marinade into shallow glass dish and add meat. Turn meat to make sure it is coated on both sides.

Marinate at room temperature for 1 hour or overnight in the refrigerator. Turn meat occasionally while marinating.

To cook:

Add 1½ tablespoons olive oil to cast iron skillet and heat over medium-high heat for a couple minutes. While pan is heating, remove meat from marinade and drain off excess moisture.

Place steak in hot skillet and cook for 2 or 3 minutes per side or until it reaches the desired level of doneness. Remove steak from skillet and let rest under an aluminum foil tent for 5 to 10 minutes.

While the steak is resting, add the remaining olive oil to the pan, and return heat to medium-high. Add sliced onion and peppers to the pan. Do not stir vegetables until they begin to brown, then stir and allow to brown on remaining sides. Do not overcook – the goal is to get a nice brown sear without burning.

To Serve:

For soft tortillas, place them in a tortilla warmer or wrap in aluminum foil and place in warm oven.

Slice steak into thin slices and serve with warm tortillas, the cooked vegetables and your choice of toppings.

We used red salsa, but you can also use green salsa. Some diced avocado, and lime wedges. Enjoy!!
