When you hear the word candy cane, it is always associated with a candy that is in the shape of a small cane with white and red strips through it.

Or a small rounded candy you would receive at a restaurant after enjoying a meal.

Did you know though that there is a root vegetable that is also referred to as a candy cane? Yes, the beet root called “Chioggia,” and it has stripes of red and white on the inside its flesh.

shredded candy cane beetThe beet is nothing new to the vegetable market, as it is a Heirloom, meaning heirloom vegetables are open-pollinated cultivars, and have a reputation for being high quality and easy to grow (The Heirloom Vegetable Gardener’s Assistant).

Open-pollination is a particular cultivar that can be grown from seed and will come back “true to type.”

Our featured recipe contains these heirlooms, the candy striped Chioggia. Here is what you will need to make your “Shredded Candy Cane and Green Apple Slaw with Pecans.”

1 large chioggia beet, peeled and shredded

1 large Granny smith apple, shredded with skin on

1/4 cup pomegranate dressing (can be purchased at your local Whole foods Market)

1/3 cup pecan pieces

pomegranate dressingFirst add the dressing to a large mixing bowl. You can add more than 1/4 cup of the dressing if you wish.

After shredding the beet, and apple mix it right away with the dressing, as it contains vinegar, which will coat the produce and stop it from browning to fast. Isn’t that amazing how the chioggia beet looks so much like a candy cane?

adding pecansMix the shredded beet and apple together until it is well coated with the dressing. Next add the pecan pieces and mix in.

French Toast Fruit Roll UpsAt Chef’s Talk they explain that recipes for “French Toast” can be traced back to Ancient Roman times. They go on to say that the original name for French Toast in French was “pain a la Romaine” or Roman bread (Chef Talk).

There is a collection of Roman recipes that are called Apicius. The collection was compiled in the 4th or 5th century. In reference to French toast  the “Apicus Cookery and Dinning in Imperial Rome” wrote: “Another sweet dish: Break [slice] fine white bread, crust removed, into rather large pieces which soak in milk [and beaten eggs]. Fry in oil, cover with honey and serve.”

The foods described in the Roman Cookery, lets one know about the dietary habits of the ancient Roman world around the Mediterranean Basin.

The recipes though were geared for the class of wealth, and a few recipes contain ingredients that were considered exotic foods at that time.Our featured recipe is French toast.

A recipe that is enjoyed across all classes of people today. Were not featuring ordinary French toast, and surely not compared to the French toast eaten in Ancient Roman times.

The featured recipe is: French toast Fruit Roll Ups, and here is what you will need.

4 slices of sourdough bread, crust removed

4 ounces cream cheese, room temperature

1/4 cup raspberries, fresh or frozen

1/2 cup blueberries, fresh or frozen

2 to 3 large eggs

Real maple syrup

sourdough bread with crust cut off and rolled flatBreak eggs open in a pie dish or similar utensil, and beat eggs, set aside. Next, cut crust from bread and flatten with a rolling pin. Spread each slice of bread with cream cheese, and add fruit, and roll up bread starting from fruit side.

Dip roll ups in egg batter and cook in a heated pan over medium heat with grass fed butter or coconut oil. Cook until done, much the same as traditional French toast.

Greek Cucumber Yogurt Sauce for Gyros

Greek Cucumber Yogurt Sauce with Lamb - Beef Sirloin StripsTzatziki sauce is a Greek sauce served with grilled meats or as a dip. Tzatziki is made of strained yogurt, usually from sheep or goat milk, and is mixed with cucumbers, garlic, salt, olive oil, sometimes lemon juice, and dill, mint, or parsley.

The culinary cuisine of Bulgarian, Macedonian, and Serbian use this sauce as a cold soup by just adding water to thin it out.

Doing so makes the sauce a drink that is poured over a mixture of vegetables, eggs and ham to create a variation of okroshka, a Russian cold soup by origin.

This cool and creamy Greek Cucumber Yogurt Sauce or Tzatziki sauce is used in preparation of  Greek Gyro Sandwiches.

You will need whole grain flat bread, the soft and thin kind ready for wrapping up your Gyro.

Depending on the amount of servings you want you will need both Lamb and Beef  sirloin strips, about 1/2 pound of each. BBQ the meat is the best way to prepare it.

As for the sauce you will need…

diced English Cucumber1 English Cucumber – peeled and diced
1 tablespoon Himalayan salt

Place diced cucumber in a colander and spread out evenly and sprinkle salt over it. Place colander over a large plate or bowl and top the colander and set aside for 30 minutes. The salt will drain the water from the diced cucumber. Leaving the moisture in the cucumber will make for a runny sauce.

1 tablespoon fresh dill

Juice of one fresh medium lemon

2 to 4 pepper corns – either white or black

3 cups of real Greek Yogurt – the one that is authentic strained

Place all ingredients but the yogurt into a blender or food processor – processes or blend about 30 seconds to 1 minute.

mixing cucumber sauce with Greek yogurtAdd mixture to the yogurt and mix in until well combined. Cover bowl and let sit for 2 to 3 hours in refrigerator, which will allow flavors to blend and infuse.

Greek Cucumber Yogurt SauceIt is optional to add more salt, but doing so after you have prepared the sauce.

Greek Cucumber Yogurt Sauce with Lamb - Beef Sirloin Strips for GyrosThis sauce can also be used as a dressing for a Greek salad or any salad of choice that goes well with cucumber.

Italian Five Cheese Chicken Roll Ups

Italian Five Cheese Chicken Roll UpsWith little more than your favorite spaghetti sauce (we used a sauce made with cream and vodka – from the Whole Foods Market), cream cheese and a shredded Italian cheese blend, you can have yourself some chicken roll-ups. They are super easy to prepare.

Here is what you will need:

2 oz. of cream cheese softened

¼ cup bell pepper; diced (red, yellow, orange, green, use all colors, or your choice – we buy tri-colored frozen bell peppers)

¼ tsp. garlic powder

4 chicken breasts; boneless skinless

1 cup Italian 5-cheese blend, finely shredded

½ teaspoon dried oregano leaves

1 cup spaghetti sauce (your favorite)

salt to taste, optional

Heat oven to 400°

mix ingredients  togetherIn a medium bowl mix cream cheese, ½ cup of cheese, bell pepper, oregano, garlic and salt to taste.

When we salt in our recipes, it is always use Himalayan salt.

After you mix up the ingredients, set aside.

Cut chicken long ways across breast. Place each cut chicken piece one at a time in a large plastic bag, seal it and with a rubber mallet or rolling pin flatten chicken to ¼-inch thicknesses.

At one end of chicken strip roll up with cheese mixture, tucking in ends around filling to completely enclose the filling.

Place seam sides down in 13 x 19 inch baking dish coated with olive oil. Pour spaghetti sauce evenly over chicken, and cover with aluminum foil.

chicken roll ups out of the ovenPlace in preheated oven and bake for 30 minutes or until chicken is cooked through.

Remove foil, sprinkle chicken with remaining ½ cup shredded cheese. Bake an additional 3 to 5 minutes or until cheese is melted.
