Personally I would consider this our signature dessert recipe, as we sell desserts, and this is the most ordered dessert on our list.

Bread pudding is a dessert dish with very old roots. It evolved as a use for stale bread. Many cultures throughout history have seen starvation, and food shortages, and they seen no reason to waste food, not even stale bread. Many culinary dishes have been invented using stale bread, both savory and sweet.

Today making bread pudding is still a tradition, though current recipes are far more extravagant or splendid since the inception of making bread pudding.

Our featured recipe never goes without a word of, “this was so delicious”, and we think you will feel the same. It is fast and simple to put together, and here is what you will need.

3 eggs

4 cups heavy whipping cream

1 cup sugar

1 tsp. salt*

3 teaspoons vanilla extract

2 cups blueberries (fresh or frozen)

3/4 cup white chocolate chips

1 loaf French bread, cut into 1-inch cubes

*With the presence of sugar in a recipe, using salt can reduce the amount of sugar used. The original recipe calls for 2 cups sugar but no salt. By adding the salt, less sugar is needed. The salt brings out the sweetness of the sugar, making it seem as though you put two cups.

Preheat oven to 350°

blueberries and white chocolate chips In a large mixing bowl, add eggs and sugar, then cream together. Next add the heavy cream and vanilla. Mix until combined. Next stir in blueberries, and white chocolate chips.

Raspberry Tiramisu

If you like Tiramisu and raspberries even more, then you’re gong to like Raspberry Tiramisu.  This recipe is a twist on the Italian favorite. Ladyfingers are layered in the dish with a mascarpone, ricotta, raspberry mixed filling.

Others have also gotten away from the traditional cake with a Chocolate-Raspberry Tiramisu, and a Mango Tiramisu with Raspberry Sauce.

We used all organic dairy products. It is true that the Food and Drug Administration (FDA) of the United States says there is no difference in the use of BGH (Bovine Growth Hormone) in traditional dairy over non use in organic dairy. But we feel that statement is not really accurate, as the flavor is very different. The dairy products that come from cows that did not receive any BGH, is more creamier as well. How it always was and should be, before the use of BGH in the raising of cows.

The lady fingers in this recipe was purchased at the Whole Foods Market. They did have a gluten free lady fingers product, but we did not like the fact that it included mono-glycerides and diglycerides in it. What is our concern?

First, it is a food additive commonly used to combine ingredients containing fats with those containing water, two types of ingredients that don’t ordinarily combine well.

Made up in part of fatty acids, mono- and diglycerides may contain trans fats, either when manufactured in a lab or, if they come from an animal or vegetable source, when exposed to heat for processing into packaged and prepared foods.

Trans fats are associated with increased risk of numerous diseases, including heart disease, stroke, diabetes, and also causes inflammation in the body raising LDL (bad) cholesterol levels, and lowers the HDL (good) cholesterol levels.

Now for our featured recipe: Raspberry Tiramisu, and here is what you will need.

2 lemons

Raspberry Tiramisu - in cake dish1/3 cup granulated sugar

3 tbsp. granulated sugar

3 sprigs fresh mint

3/4 cup filtered water

8 oz. mascarpone

8 oz. whole-milk ricotta

1 1/2 cup heavy cream

4 cups raspberries, fresh or frozen (thawed)

2 packages lady fingers (each package contains 20 cookies)

lemon peel mint sugur waterWith a vegetable peeler, remove rind of one lemon in strips and place into a medium sauce pan. With the other peeled lemonlemon finely grate the zest and place aside.

Next add 1/4 cup of lemon juice, sugar, mint, and water into the sauce pan with the lemon rind. Bring pan to a boil, lower heat, simmer for 1 minute.

Set pan aside to let cool completely, then discard the lemon zest and mint. You should have 1 cup (8 ounces) of prepared lemon syrup.

mixing dairy products, zest and sugar - folding in raspberries for Raspberry TiramisuAdd mascarpone, ricotta, reserved zest and remaining 3 tablespoons sugar to a large bowl, and mix together with an electric beater on medium speed until smooth.

Reduce the mixer speed to low and gradually add the heavy cream, mixing to incorporate. Increase the mixer speed to high and beat until stiff peaks form.

Fold in the raspberries with a large mixing spoon or spatula, gently mashing them against the sides of the bowl.

building the Raspberry TiramisuUsing a baking dish that will allow for a two layer cake, line a 9 X 9-inch baking dish with lady fingers, as shown in illustration. Drizzle half the lemon syrup over the lady fingers, then top with half the cream mixture (about 4 cups).

Repeat with the remaining fingers, syrup and raspberry cream. Refrigerate for 1 hour or up to 24 hours. After one hour of refrigeration, cover the dish so cream doesn’t give you a dried out look.

Raspberry Tiramisu -LgPlate and serve. If you wish top each plated serving with mint and fresh raspberries.

Gluten Free Creamy Pesto Fettuccine

I like going to the Kona Grill here in town. They make the best Apple Walnut Bread Pudding and a wonderful Macadamia Chicken Salad. My favorite though is their Basil Pesto Linguine. I did adventure into the kitchen and used my cooking skills to try and mimic the dish (I posted it here: Basil Pesto Linguine). It came out pretty good, though it still needed something. So back to Kona Grill I went.

This time I was fortunate, as the manger came by my table and asked how our food was. I told her that I had tried my hand at making this dish, but it still needed something. She told me the pesto sauce contained chipotle peppers in adobo sauce as well. Then she said that is all she could say. But for me that was enough.

Play the video to get a glimpse at the finished dish. Though we did forget to put the small cherry tomatoes, we did even miss them, As the recipe had the same flavor as the Kona Grill. This time though I used gluten free fettuccine pasta.

Here is what you will need for the featured recipe.

16 ounces of cooked gluten free Fettuccine

1 lb. of chicken breasts, about 2, skinless and boneless

2 Andouille sausage links, about ½ pound

Can of Chipotle Peppers in Adobe Sauce½ cup fresh basil pesto (link here for recipe – History of Pesto Sauce)

1 teaspoon chipotle peppers in adobo sauce

1/3 cup heavy cream

15 cherry tomatoes (about), sliced in half to measure 1 cup (optional)

Cook gluten free fettuccine according to package instructions.

Preheat oven to 350 degrees

Meantime, while chicken is a little frozen, slice chicken breasts horizontally 2 to 3 times, depending on thickness of the breast meat. Cut slices into 1-inch chunks. Place cut chicken onto a baking sheet and place in heated oven for 15 to 20 minutes or until chicken is oblique in color and no longer pink.

Next add pesto to a small bowl and mix in adobo sauce and heavy cream, and set aside.

Place a large frying pan over medium heat and add 2 tablespoons of extra virgin olive oil. Next slice links down the middle and remove meat from casings and place into pan and start moving meat around with a spatula, so meat falls apart into small chunks.

Now add cooked chicken, and mix in with sausage. Next add pesto – chipotle sauce and mix in.

Next add cook gluten free pasta, and mix till well incorporated.

Layered Pumpkin and Cranberry Parfaits

Such a great combinations of flavors that complement each other. There’s pumpkin, cranberries, zest of an orange, and ginger syrup.

Cranberries fight urinary infections, cancer, and heart disease. The little red berries can promote weight loss, as well as emotional well-being. It also boosts and strengthens the immune system.

Pumpkin contains the antioxidants, vitamin C, and E, and several trace minerals. The squash also aides in weight loss and is high fiber content.

Fiber is valuable as it helps to curb appetite and slows down digestion. Pumpkin remains in the stomach for a longer period of time than low-fiber foods, and also slows the absorption of the sugar found in this recipe, therefore not spiking your blood glucose levels.

Now for the featured dessert, and here is what you will need.

The Pumpkin Layer

1 15 oz. can pumpkin puree

8 oz. cream cheese

6 oz. Greek yogurt

⅓ cup ginger syrup

1 tsp. pumpkin pie spice

Whip the cream cheese in an electric mixer for 3 minutes or until creamed. Add pumpkin, yogurt, and mix until well combined and it has a silky smooth mixture. Add the syrup, pumpkin pie spice, and mix in till well incorporated.

Taste and see if it needs more syrup.

Put the pumpkin mixture in a medium bowl, cover and refrigerate.

The Cranberry Layer

2 14 oz. cans whole cranberries

2 tsp. zest of an orange, minced fine

Pour cans of cranberries into a medium sauce pot over low heat. Warm cranberries and add zest, stirring in, and let simmer on low for 2 minutes. Set aside and let cool.

The Whipped Cream Layer

8 oz. heavy cream

½ cup powdered sugar

single dessert glass of Layered Pumpkin and Cranberry Parfaits Place whipping tongs and a medium metal bowl in freezer for about 5 minutes.

Remove bowl and whipping tongs from freezer and pour cream and powdered sugar into the cold bowl and whip with the cold tongs using an electric mixer, until cream is whipped with heavy peeks.

Using 8 ounce glass dessert cups (about 4) layer starting from the bottom spooning in pumpkin, then cream, next is cranberries, ending with another layer of pumpkin.

Top each dessert glass with whipped cream a few fresh cranberries and some almond or pecan bits. Enjoy!
