National Pie Day

collage of fruit pies - National Pie DayNational Pie Day is celebrated yearly on January 23, and has been sponsored since 1986 by the American Pie Council. National Pie Day was launched in the ’70s by a man who loved pie so much he wanted to celebrate, and he chose January 23 because that was his birthday the American Pie Council declares.

According to The Dallas Morning News, pie has been around since the ancient EgyptiansThe Romans published the first pie recipe — a rye-crusted goat cheese and honey pie. Early pies were made with meat, and during the 1500’s, fruit pies were invented.

The American Pie Council is an organization committed to preserving America’s pie heritage and promoting America’s love affair with pies.

What’s more American than apple pie? How about…

Even though apple pie is an all American dessert, it was actually brought to the eastern shore’s of what is now the United States, by the Dutch.

Cottage Cheese Apple Pie Cottage Cheese Apple Pie

1 egg

Pinch of salt

1 tbsp. flour

1 cup heavy cream

1 cup cottage cheese, small curd

1 cup sugar

3 apples, peeled and cored, thinly sliced

1 pie crust – store bought or your favorite recipe

Heat oven to 350 degrees

In a large mixing bowl add cottage cheese, egg, cream, flour, and sugar. Mix until combined. Line the pie crust with mixture.

Layer the apple slices around the outer edge of the pie. Then layer apples circling the center of the pie.

Before baking pie, it is optional to sprinkle some nutmeg or cinnamon on top. Bake for 45 minutes or until knife inserted comes out clean. Do not under bake.

Roasted Chicken Drumsticks and Vegetables with Mustard-Tarragon Sauce

Chicken breasts often get all the glory, when it comes to preparing a poultry recipe. It could be that the white meat is top choice. Some do say that the drumsticks and thighs are the juiciest and flavorful meat on a chicken. We would add they inexpensive and easy to prepare as well.

Our featured recipe is a simple way to take those ordinary (I had to add that),  juicy and flavorful chicken drumsticks into an extraordinary meal. You can adapt the recipe and use thighs as well.

Today’s domestic chicken is mainly descended from the wild red jungle fowl of Asia, with some additional input from the grey jungle fowl (Science Daily).

Since their domestication, a large number of breeds have been established, but with the exception of the white Leghorn, most commercial birds are of hybrid origin (cab direct).

Now for our featured recipe: Roasted Chicken Drumsticks and Vegetables with Mustard-Tarragon Sauce, and here is what you will need.

2 tablespoons olive oil

2 teaspoon Himalayan salt

1 ½ teaspoons black pepper

1 ¼ pounds small tri-colored baby potatoes

1 pound large rainbow carrots (about 3)

1 red onion cut in ½ inch chucks

1 large lemon, sliced, seeds removed

3 garlic cloves, sliced into three’s

8 large chicken drumsticks

¾ cup white wine, your choice

½ cup heavy cream

1 tablespoon flour

1 tablespoon sweet garlic Dijon mustard (if not able to find, Dijon mustard is fine)

1 ½ tablespoons fresh tarragon

Heat oven to 450 degrees

preparing chopped vegetablesIn a large bowl toss 1 tablespoon oil, 1 teaspoon salt, and 3/4 teaspoon pepper with potatoes, carrots, onion, and garlic. Add mix to a large roasting pan or baking dish.

adding chicken and wine to baking dishNext using a large bowl, add remaining 1 tablespoon oil, 1 teaspoon salt, 1/2 teaspoons pepper, and chicken legs. Toss drumsticks to coat with oil. Next arrange the leg on top of the vegetables in the pan, and pour wine into the pan.

Place dish in a preheated oven and roast for 45 to 50 minutes, or until chicken is done and golden but not crispy.

Remove chicken legs and keep warm.

mustard tarragon sauceIn a small bowl or cup, stir together cream and next 3 ingredients until smooth, add to vegetables and stir in mix well. Place dish back into heated oven and bake 5 to 8 more minutes, stirring once, until sauce is thickened.

Chopped Broccoli Tomato and Bacon Salad

This salad also includes eggs for an extra punch of protein. The salad has a carbohydrate (tomato), vegetable, fat, and a protein. It was also made with homemade mayonnaise that includes olive oil and avocado oil in its preparation. This salad contains omega-3, great for the skin, heart, and your emotional well-being.

The broccoli and cauliflower are crusiferous vegetables, at which are great for warding off cancer cells, with only 4 serving per week. Any other vegetable needs to be eaten ten times a day to get the same cancer protection results.

An added bonus to this recipe is what cauliflower does. It helps balance hormones by reducing excess estrogen. Chopped Broccoli Tomato and Bacon Salad

4 bunches broccoli, chopped

½ head cauliflower, chopped

12 bacon strips, cooked and cut into 1 inch strips

1 cup tomatoes, seeded and chopped

1/3 cup white onion, chopped

2 hard-cooked eggs, diced

1 cup mayonnaise (homemade recipe to follow)

1/3 cup sugar

2 tablespoons balsamic  vinegar

In a large salad bowl, combine the; set aside.

In a large salad bowl, combine the mayonnaise, sugar and vinegar. Add broccoli, cauliflower, bacon, tomatoes, onion and eggs. Mix vegeatble/bacon miture with wet ingredients, till well coated. Plate and serve.
