Teriyaki Chicken with Vegetables

Chicken Teriyaki  is a very popular Japanese food in the US.  Teriyaki in Japanese means “grilled with shine.”  Sugar in teriyaki sauce gives a shine to the food, making it not only delicious, but also looks more appetizing.

It is very simple to make teriyaki sauce, as it is a mixture of only three ingredients, soy sauce, sugar, and sake. You can also use mirin for a sweeter teriyaki.  One of the advantages of making the sauce yourself is you can adjust the flavor the way you prefer.  Also making your own, avoids the unnecessary chemicals in store bought teriyaki sauce.

It is not common in traditional Japanese cuisine to use garlic, though it is in Korean cooking.

Our featured recipe is a Teriyaki Chicken with Vegetables, though not an authentic recipe, but an American rendition.

Teriyaki Sauce

4 tablespoons tamari sauce  (works the same as soy sauce)

4 tablespoons mirin (can use sake for a less sweeter teriyaki sauce)

2 tablespoons coconut sugar (not used in Japanese cooking, can use white sugar if you wish)

2 teaspoons arrowroot (can also use cornstarch or potato starch)

2 tablespoons water

Mix together in a small sauce pan over medium heat, the first three ingredients. In a small cup mix together the water and arrowroot. Bring the pot to a slow boil and add the arrowroot-water mixture to the boiling pot. Stir in and continue to stir until the liquid thickens. Remove from heat and set aside.

Tamari is specifically a Japanese form of soy sauce, traditionally made as a by-product of miso paste. Tamari is a gluten-free product, were as soy sauce is not.

Now let’s prepare the meat and vegetables to mix with our homemade teriyaki sauce.

2 inch piece of fresh ginger, grated

3 green onions, chopped

2 carrots, cut julienne style

2 celery ribs, cut julienne style

8 asparagus spires, cut into 1 to 2 inch pieces

4 chicken breasts, skinless and bones, cut into 1 inch chunks

2-3 tablespoons sesame seeds

A traditional Japanese chicken teriyaki uses chicken thighs, and asparagus is not a vegetable normally used in Japanese cooking.

sauteing ginger and green onionsSaute the prepared ginger and green onions in the heated coconut oil (2 tablespoons) over medium heat in a large frying pan, until fragrant, about 5 minutes. Next add the carrots, celery, and asparagus, and continue to stir-fry until vegetables are just tender, about 10 minutes. Set aside.

cooking chicken thigh chunks in teriyaki sauceHeat a large frying pan over medium heat with 2 tablespoons of coconut oil, and add chopped meat and cook until meat is oblique. Next add the teriyaki sauce and mix in.

Coconut Chicken Lettuce Wraps

If you enjoy Asian food and Latin food alike, this recipe can be considered an infusion of the two. Only for the fact that the butter lettuce is used like a taco.

This recipe is very simple and easy to prepare, and is bursting with Asian flavor. We used tapioca starch in place of cornstarch, which we feel is a better choice. Another great cornstarch replacement is arrowroot.

The recipe contains coconut, in the form of oil and dried coconut meat. Coconut oil, though it contains saturated fat, also has fat in the form of lauric acid, about 50%. Lauric acid is a medium chain fatty acid, which has antibacterial, antiviral, and antiprotozal properties.

Tips on Choosing the Lettuce

Butter lettuce is great to use with this recipe for its tenderness, and texture. Choose the leaves that are the largest, and most pliable. Be sure the leaf is not wilted or has and discoloring on it.

Let’s get stated with preparing our featured recipe: Coconut Chicken Lettuce Wraps, and here is what you will need.

12 leaves of butter lettuce

2 tablespoons extra virgin coconut oil

1 pound chicken breast or chicken thigh strips (option to also use ground meat)

2 medium green onions, chopped

½ cup canned water chestnuts, drained, rinsed, and chopped

¼ cup chicken broth

2 tablespoons tamari soy sauce

1 tablespoon tapioca starch

2 tablespoons filtered water

¼ cup gomasio (sesame seeds and sea salt) – recipe to follow

1/2 cup dried fine flacked unsweetened coconut meat

First make your gomasio.

Recipe for Gomasio

2 cups whole sesame seeds

1 tablespoon Himalayan salt

Place sesame seeds in a cast iron skillet over medium heat.

Roast for 10 minutes, stirring constantly with a wooden spoon until seeds turn golden brown.

Place sesame seeds and salt in a suribachi or mortar and pestle, and grind into a coarse meal. A coffee grinder will work as well.

When cooled, transfer to a glass container.

Store in refrigerator. Keeps for 6-8 weeks.

Gomasio is the principal table condiment in the Macrobiotic diet. Use it in place of table salt to season your food, giving it a hearty delicious taste.

According to Macrodiet.com, gomasio also functions as a medicine in itself, due to its powerful ant-acid biochemical effect–a thousand times more effective than AlkaSeltzer. They state you can use 1/2 to l teaspoonful placed directly into the mouth,  and suck on it well, before swallowing, as it strengthens digestion and improves energy.

Because the gomasio uses Himalayan salt (Celtic or sea salt can be used as well), it contains all of the vital trace minerals like (but not limit too) calcium, potassium, and magnesium, making it a natural anti-acid for the stomach. Table salt will not work, as it only contains sodium.

Preparing Coconut Chicken Lettuce Wraps

Wash lettuce leaves gently so as not to damage or tear them. Drain the lettuce in a clean colander or on clean paper towels for a few minutes before using.

Heat the coconut oil in a sauté pan over medium heat. Add the chicken stripes and sauté until oblique in color.

Mix the tapioca with water and add to chicken mixture. Cook over medium high heat, until the sauce thickens.

Transfer chicken mixture to a serving bowl set on a large platter and sprinkle with the gomasio and mix in. Top with the dried coconut meat on top. Next arrange the butter lettuce leaves on the platter around the bowl.

Each person takes a lettuce leaf and spoons some of the chicken mixture on to it, and grabs the butter lettuce with meat mixture like a wrap of taco style.

Basil Chickpea Miso Vinaigrette

¼ cup extra-virgin olive oil

4 tablespoons balsamic vinegar

2 teaspoons chickpea miso, room tempurature

1 cup finely chopped fresh basil leaves

3 cloves garlic, minced

2 teaspoons lemon zest

juice of half a lemon

Tear basil leaves without steams, and loosely fill one cup. Place oil, vinegar, miso, basil, garlic and lemon zest (we forgot the lemon zest, my bad) in a small jar. Screw lid on tightly and shack well until smooth, making sure miso is dissolved and mixed in well. Set aside.

Here is what you will need for the Red Pear and French Bean Salad.

2 lbs. French green beans, ends trimmed

4 small, ripe but firm red pears, halved and thinly sliced lengthwise ( seed, but do not peel)

1 cup chopped pecans

Wash beans and trim the ends. Cut beans in half. You can blanch the beans or use them raw. Blanch for about 2 minutes in boiling water. Drain and set aside.

Preparing Red Pear and French Bean Salad

Prepare the pears while the beans are blanching. Squeeze the juice of half a lemon into a large bowl. Cut pears using a apple slicer, and slice each wedge one time more. Place all pear slices into bowl with lemon juice, and mix to coat pears with juice. Coating them with lemon juice will prevent the pear flesh from oxidizing or turning brown.

Next, place the pecans and basil vinaigrette into a large mixing bowl. Place pears and beans into bowl and toss to mix well, making sure produce is coated well with vinaigrette.

If you like Italian Food or Anti-pasta Italian Food…then you came to the right place.

I called this recipe an International Lasagna as food items from other cultures were added in. Like goat cheese from the Mediterranean, sesame seeds and oil, including soy sauce and fresh ginger from Asian cooking. Not to forget tortillas from the Mexican cuisine. Though we did use 100% whole wheat tortillas.

Here is what you will need:

First though preheat your oven to 350 F degrees.

ingredients for Anti Pasta Asian Lasagna

1 tbsp. honey

3 tbsp. molasses

3 tbsp. sesame seeds

3 tbsp. sesame oil

3 cloves garlic, minced

3 tbsp. fresh ginger, minced

3 tbsp. soy sauce

2 -14 oz. cans stewed tomatoes

Mix together in a small bowl: honey, molasses, soy sauce, sesame oil, minced garlic, minced ginger and sesame seeds. Set aside.

But you will need the following:

1 cup frozen string green beans

1 cup frozen mix peas and carrots

1 cup brown rice, cooked

1 large breast chicken, cooked and cut into small chunks

2 green onions, diced

1 cup chicken broth, no salt added

6 (7-8 inches) whole wheat tortillas

2 – 6 oz. can tomato sauce

Cook rice according to package instructions with 1 cup of chicken broth and 1 cup water. When rice is done add the diced onions and frozen vegetables and simmer 2 to 3 minutes allowing frozen vegetables to thaw and warm up. Turn off heat and set aside.

Cut up chicken breast in small chunks and mix in with rice mixture along with the honey mixture and one 6 oz. of tomato sauce till all mixtures are well incorporated. Set aside.

Next take your stewed tomatoes and pour them into a strainer and strain off liquid. Put the tomatoes into a food processor and puree them.

Take a 13 x 9 inch baking pan and pour 1/4 cup of the pureed tomatoes and spread it over the bottom of the pan. Place two whole wheat tortillas over the sauce.

Now pour 2 cups of the meat mixture over the tortillas. Spread a hand full of the two cheese(goat cheese and mixed Italian cheeses)over the meat mixture. Repeat this process two more times. Top with one 6 oz. tomato sauce and cheese. Place the prepared pan into the oven and bake for 30 minutes. Plate and serve.
