The mysterious Minoans were among the first residents of Greece, arriving around 2700 B.C, writes Susanna.

Besides finding wild grapes and making wine with them, they also discovered a bitter native berry they began to cure and press, and if you guessed the olive, you guessed correctly. The olive, and its oil, became the economic foundation of their civilization (Food History Of Greece – Saveur).

Making Greek Grilled Chicken

We love barbecuing as the food always seems to have a special flavor.

Our featured recipe is Greek Grilled Chicken, and before we bring out the recipe, we wanted to show you what we did to evenly and flavor-fully cook the chicken.

slits cut into chicken breastsWe cut small slits crosswise on each chicken breast, being careful not to cut all the way through. Doing this helps the marinade penetrate the meat, which disperses the marinaded flavor throughout the meat and not just on the surface. It also helps the chicken cook evenly.

We also did this method with roasted chicken breasts (Roasted Chicken With Chipotle Cinnamon Orange Glaze), and we have to say it always gives exceptional flavor to the meat, as well as the meat cooks evenly and retains its juices.

Making those slits in the meat before marinading it, makes for awesome BBQ or roasted chicken.

A Greek food expert on “About Food“, expresses Greek seasoning as the “quintessential” Greek flavors, which are olive oil, lemon, garlic, and oregano (About Food).

With that said, our mouths are watering, so let’s bring out the recipe, and here is what you will need.

1/2 cup extra virgin olive oil

1 teaspoon lemon zest

1/3 cup lemon juice

1 teaspoon Greek seasoning (bought at Whole Foods Market)

1 teaspoon dried oregano

1/4 teaspoon Himalayan salt

Dash black pepper

In a glass measuring cup or an equivalent vessel, add all 7 ingredients and mix well.

marinading chicken breastsUsing 6 to 8 chicken breasts, without the skin and bones, make those slits in the meat.

In a large bowl, while layering the breasts, pour marinade over meat.

If you noted in our first image, the chicken breasts are sitting on a piece of wax paper, take it, and invert it over the chicken.

Place the bowl in the refrigerate for up to 3 hours.

Grilled Greek Chicken on the BBQHeat your BBQ grill, and place the meat on the hot grill with flame turned down.

Turn chicken about every 4 minutes. If you are using some thick chicken breasts, it will take about 25 minutes or so to cook the meat to 165 degrees internal meat temperature.

Tomato Basil ChickenYou have some chicken breasts and are looking for a new idea to prepare them? Well you have arrived to the right place for a quick and easy recipe. It’s our Tomato Basil Chicken entrée. Besides being healthy with all fresh ingredients that include tomato, basil, and garlic, this recipe is reminiscent of warm weather and luscious Mediterranean summers.

According to Spice Pages by Gernot Katzer, basil is native to India, though it is not used as a culinary herb, but rather is considered sacred and use in religious rites. Besides the most common Mediterranean type basil sold in the Western world, there is also varieties from the Asian world, such as Thailand‘s sweet basil with a licorice flavor, and a lemon basil which has a distinct balm-like flavor. Katzer states there are also verities introduced to European gardeners from Africa as well (Spice Pages: Basil).

Now for our featured recipe: Tomato Basil Chicken, and here is what you will need.

Tomato Basil Chicken - ingredients

1 lb boneless chicken breast (about 2-3 medium sized pieces) with the skin on

1 teaspoon of rock salt, Himalayan or Sea salt, 1/2 teaspoon if salt is ground

½ teaspoon black pepper

2 handfuls of fresh chopped basil, about 1 1/2 cups

1 ½ -2 cups fresh diced tomato

¼ cup olive oil

½ cup grated parmesan cheese

2 cloves of garlic

Fresh chopped ingredients for Tomato Basil ChickenDice the tomatoes, and chop the garlic. Tear the basil apart by hand.

adding salt and pepper to chicken breastNext, season the chicken breasts with the salt and pepper. You may use the ground salt, but the rock salt lends a more rustic appeal to the dish.

adding chicken meat to a preheated pan with olive oilIn a preheated ceramic coated pan over medium-high heat, add olive oil and place the chicken skin side down.

adding garlic and browning the meatNext add the garlic and allow the chicken to brown on both sides, turning once.

adding tomatoes and basilOnce both sides are adequately cooked, add the tomatoes. Sauté for about 3-5 minutes until the tomatoes have softened and some of it has formed a sauce with the olive oil and garlic. Next add the basil and cook for another minute.

adding cheeseNext add the grated Parmesan cheese and remove from the heat.

plated- Tomato Basil ChickenPlate and serve. Makes 2 to 3 servings. Add a side of cooked Mediterranean vegetables or a Greek salad.

What do you know about the “Blood Orange”? The blood orange is a type of orange with a flesh that is almost-blood-colored. The fruit is about the same size as an average regular orange, though it can be smaller or larger.

Fresh Blood OrangesWhat gives the blood orange its distinctive dark flesh color is due to the a compund called anthocyanin, an antioxidant pigment common to many flowers and fruit, but uncommon in citrus fruits, making the blood orange a unique piece of fruit.

Due to the blood oranges pigments of red, it contains greater amounts of antioxidants, more than a regular orange.

The three common types of blood oranges, which are the Tarocco, native to Italy, the Sanguinello, native to Spain, and the Moro, which is a newer variety sold at the market. There are 12 lesser common blood orange varieties as well.

The blood oranges can and have been used to make marmalade, and the zest can also be used for baking. A very popular Sicilian salad that is prepared in the winter months, is made with sliced blood oranges, sliced fennel, and olive oil. The oranges have also been used to create Italian sodas among other things.

Now for our featured recipe: Ginger-Orange Chipotle Chicken, and here is what you will need.

3/4 cup ginger-orange marmalade

1 1/2 tablespoons adobo sauce (canned chipotles)

1 1/2 tablespoons cider vinegar

1/8 teaspoon ground cloves

1 large sweet potato, cut into wedges

2 small blood oranges, quartered

2 tablespoons avocado oil

4 large chicken drumsticks

1/3 cup mixed almond and coconut flour

Preheat oven to 475 degrees

Ginger Orange Chipotle SauceIn a medium mixing bowl, mix first 4 ingredients together, and reserve 1/3 cup of the sauce.

Ginger Orange Chipotle Chicken - Ready to RoastIn a large bowl, add the avocado oil, prepared sweet potato and blood oranges, and toss to coat with oil.

On a foil-lined baking sheet, arrange orange and sweet potato wedges.

Almond Coconut Flour Breaded Chicken LegsToss chicken in flour mixture, then coat with sauce. Because the flour mixture does not contain wheat flour, this dish can be considered a gluten free recipe.

Now add the bread chicken legs to the baking sheet with blood orange quarters and sweet potato wedges. Roast in heated oven for 15 minutes. Turn chicken and brush with sauce. Continue to roast until juices run clear when pierced with a knife, about 10 minutes.

Spanish Chicken Salad

Paprika is used to garnish many foods we prepare. Like soups and deviled eggs, also for flavoring potato and pasta salads. It is also used in BBQ. Most of the prepared seasonings that are store bought for marinating meats have paprika in it.

The paprika we are accustomed to using is the sweet Hungarian paprika. Paprika comes from the pods of Capsicum annuum peppers that are dried and crushed to form the powdery spice.

The sweet red chili peppers are originally native to North and South America. But today, most paprika comes from Spain, South America, California and Hungary.

Besides the sweet Hungarian paprika that is commonly used , there is the Spanish Hot paprika or smoked paprika. Dose it make a difference in your recipe the use of paprika (the classic sweet) to smoked paprika?

Yes it does matter. Most recipes use the sweet paprika that we reach for in our spice cabinet. It is derived from the sweet red chili peppers and labeled “paprika”. But smoked Spanish paprika requires the peppers be smoked, usually with oak wood, prior to processing.

Smoked paprika has a distinct flavor after being smoked. As an example smoked paprika is essential for Mexican chorizo sausage. If you used regular paprika, the chorizo would not taste the same.

Paprika as for any spice has a two fold purpose when we use them. One side is the flavor spices give to our recipe and the other side is for health reasons. Any spice including paprika when consumed stimulates enzymes in our digestive system to fight off inflammation as will as bad bacteria, just to name a few good healthy reasons.

Now for the featured recipe Spanish Chicken Salad and here is what you will need:

ingredients-for-Spanish-Chicken-Salad1/4 cup olive oil + 2 tsps.

3/4 cup slivered almonds, toasted

2 cloves garlic, minced

1 tsp. paprika, Spanish smoked

2 tbsp. balsamic vinegar

2 tbsp. mayonnaise

16 oz. mix lettuce greens

4 cups cooked chicken

2 roasted bell pepper slices, cut into smaller slices

toasting-slivered-almonds-for-Spanish-Chicken-SaladIn a frying pan over medium heat, warm 2 teaspoons of oil. Add the almonds and toast, stirring until they are crisp and golden. This should take about 5 to 7 minutes. When you start to smell them toasting, remove the pan from the burner. If you continue to toast them, they will burn.

preparing-chicken-breast-for-the-Spanish-Chicken-SaladTo prepare the chicken breast, pour one cup of chicken broth and one cup of water into a medium stock pot. Place 4 chicken breasts into stock pot and cook on medium heat until the chicken has reached an internal temperature of 165 to 170 degrees.

Remove from pot, set aside and let cool. Once cooled chopped chicken into 1 inch chunks.

whisking-in-oil-gradually.jpgIn a large bowl, whisk together the garlic, smoked paprika,vinegar, mayonnaise and option 1/2 tsp. salt, pinch of pepper. Gradually whisk in the 1/4 cup of oil and mix up until well incorporated.

You can plate to the side some shredded Jack cheese and sliced roasted bell pepper, for extra toppings.
